Old vines, vertiginous ground, a bold-hearted climbWine notes
Cepage: Carignan (20%); Syrah (80%)
Style: Well rounded full bodied red wine at 13.5% abv. Supple tannins and fruit forward with a freshness through the long ripening due to altitude
Plots: Syrah – 0.8 ha, 420 metres altitude in the black mountains above Félines-Minervois. Mica-schist dominated geology, loamy clay soil. Gentle east facing slope. Guyet pruning of 30 year old vines. Carignan – 0.67 ha, 210 metres altitude in the commune of Félines-Minervois. Sandstone gravel with some clay. Steep west facing slope; Gobelet pruning. Vines aged >70 yrs.
Vinification: De-stemmed and fermented in stainless steel. Remontage/delestage early in fermentation. 18 days on skins, fermented to dry. Aged for 9 months in tank, then aged for a further 6 months in bottle
